Lemon Tart

Makes 4 Individual Tarts, Ready in 15 Minutes

For the pastry:

  • 125g plain flour
  • 50g unsalted flora/stork baking liquid, cut into cubes
  • 25g desiccated coconut, lightly toasted (about 5-6 mins at 180C)
  • 25g natural icing sugar
  • 1 egg yolk
  • ½ tsp vanilla extract
  • 1-2 tbsp cold water

For the lemon filling:

  • 100ml fresh lemon juice
  • Zest of 2 lemons
  • 75g unrefined caster sugar
  • 125g unsalted flora/stork baking liquid
  • 4 medium eggs
  • 85g unrefined caster sugar
  • 4 x 10cm individual metal tart moulds with removable base
  • Ceramic baking beans
