Cheese and Salmon Scones

These are a great alternative to lunchbox sandwiches - especially as you can freeze them (cool down then place in freezer bags) and bung in a lunchbox, they'll usually have defrosted by the time its lunchtime! With added fibre, green veg and oily fish, they're a definite healthy option - but so tasty too. Try these sliced in half sandwiched with a little cream cheese and sliced tomato.




  • 50g smoked salmon
  • 50g watercress / baby spinach
  • 150g self raising flour (plus a little extra to sprinkle)
  • 100g plain wholemeal flour
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • A good twist of black pepper
  • 50g Flora Buttery
  • 150g mature Cheddar cheese, grated
  • 100ml milk – plus approx 1 tablespoon extra to brush
  • 1 medium egg, whisked
